Zali's 2nd birthday ~ Very Berry Coconut Cheesecake

What a week! 2 birthdays only days apart and all packed with goodness. Here is another "no added sugar" attempt at baby Zali's 2nd birthday cake (which between you and I was a lot more healthier than her 1st birthday last year).

Fully raw cheese cake

There are so many fabulous raw cheesecake recipes. All you need to do is google them and choose. I ended up making a combination of a few that I have known from the past and the amazing The Rawterian as this inspired me to use both cashews and macadamia nuts in the filling.

Now depending on how large you make your cheesecake, use as many nuts as you wish or simply use marscopone or cream cheese for those that may not want to experiment with the cashews as the filling. I thought it was amazing.

Base
3 cups mixture of cashews, macadamias & almonds
8-10 medjool dates
1/2 cup shredded coconut
sprinkle of cinnamon
1tsp vanilla essence or seed
1/2 lemon rind
pinch of salt

Filling
1 1/2 cup of cashews (soaked for at least 2 hours or preferably overnight - I did it in coconut water)
1 cup coconut meat (soaked or replace with additional cashews)
1/2 cup coconut nectar (you can use honey, agave, maple syrup etc...)
1/2 cup of coconut oil (melted over warm bath)
2tsp vanilla essence or seed

Method
1. Blend base ingredients in a blender and press into cheesecake pan and place in a freezer.
2. Blend filling ingredients and pour into base and place back into the freezer until set
3. Sprinkle blueberries and strawberries and enjoy!

All in all a beautiful day for our baby girl Zali. Super rushed as we have had so much going on. So much so that I can't wait to share my latest news with you!!!

  2. Thanks Brittany, simply blend your fave nuts eg: walnuts, almonds etc...with dried apricots, chia seeds and whalla! Feel free to add coconut, cranberries etc... xxDani
